I’m no master chef like Steve, but I have to say it: I do a mean smoked duck.
Turkey? Feh.

    Mmmmm…Duck.
    Do you prick the skin all over to let the fat drain before putting it in your smoker? It helps reduce that layer of Duck Blubber under the skin and makes the skin crisp up better.
    Glad your duck was wonderful.
