War once again rages across the South.
That’s right – the Barbecue Wars are being fought at Adam’s site, A Single Guy in the South (as if he were the only one. Heh.)
Regardless of the Texan or two who insist that beef can be barbecue, Adam is absolutely correct: barbecue is Pork, no ifs, ands, or buts*… as any North State Blogger could tell you.
After last weekend’s success, I am so tempted to break out the cooker again, and photo-blog it. Trouble is, I need a group to which to feed the results – there’s no way I can dispose of a whole batch of barbecue by myself.

I saw it an hour or so ago – sounds like a terrific idea, really. Of course, being a professional Computer Geek, have no social life, so my ideas of what might constitute a “good idea” may be rather skewed… but not in this case, I think.
I might even be able to do something barbecue-ish…. :-)

I’m still barbecuing. Came late to “The War” due to personal home tie-ups. But I’ve done my homework now!!! All the westerners notwithstanding, BBQ was born in the Carolinas!!!
I saw the bit there on your site, Indigo. Excellent. I haven’t done a whole pig since Camp Hovey, Korea in 1989… and I was only a helper then.
I’ve been inspired to do a little more research.
Mmmmmm…I love whole pig pit bbq’s! That’s the only real way to do a pig. Dig a nice deep whole, I’d say about 5-6 feet. Line the bottom of the pit with large rocks, smooth works best. Throw in lots of wood to get the fire started, with flams flicking up to about 10-12 feet above the hole. When the fire dies out, put in 3 or 4 bags of charcole, get those puppies nice and white, and then burrie the pig with some nice veggies (onions, celery, carrots) and cover the thing with a tin roof with chains attached long enough to sit at the top of the hole. Cover it with dirt and let it roast! The next afternoon you’ll have the tastiest treat ever!
I love pig roast if you couldn’t tell!
